Mini Coffee Cake

Say hello to the world’s perfect (mini) coffee cake. And by perfect, I mean perfect. It’s light, fluffy, cinnamon spicy, and has the ideal ratio of cake to crumbles. There was a moment as I was testing this cake for the first time, dropping handfuls of sugar and butter crumbles over the cake batter, that I was like, okay, this is an excessive amount of streusel, even for me. I’m going to have to cut this down....

Quick And Easy Small Batch Of Pico De Gallo

I’m sharing a super simple and easy recipe with you today, a Small Batch of Pico de Gallo! I always feel funny posting such simple recipes because I wonder if anyone really needs them, but then I remember that two of the most popular recipes on the site are my fabulously simple Butter and Garlic Green Beans and two-ingredient Oven-baked Beef Ribs, and I think I’m maybe thinking too hard....

Butterscotch Shortbread Thumbprint Cookies

Photos have been updated. Don’t worry, you’re in the right place. :) I’m so excited to hit publish on my very first blog post today! I wanted the inaugural post to be something that reflected the spirit of the blog to come, one that was representative of my passion for healthy recipes, eating your veggies, and branching out of your culinary comfort zone. But honestly, it’s December. It’s pretty much all cookies all the time coming out of my kitchen right now (stay tuned for salad in January)....

Half And Half Substitute

Half and half is a common enough ingredient in recipes but not something everyone keeps stocked all the time. If you come across a recipe that calls for it, but don’t have any in your fridge, not a problem. There are a few half and half substitutions you can use in a pinch. What is Half and Half? Half and half is a light cream sold in the US with a milk fat content of 10....

No Bake Cheesecake Bites With Graham Cracker Crust

Longtime Baking Mischief readers might remember a few summers ago when I got really excited about learning to make no-bake cheesecakes. All the deliciousness of baked cheesecake, a fraction of the time and effort, and no need to turn on your oven during the summer. What’s not to love? I posted these amazing Oreo Cheesecakes Bites and these cute little No-bake Unicorn Cheesecakes, and you guys seemed to like them as much as I do because they’ve been pretty popular....

Pesto Chicken Sandwich On Sourdough

In the hierarchy of sandwiches, a Pesto Chicken Sandwich on Sourdough has to be near the top. You’ve got bright and salty pesto slathered over toasty sourdough and piled high with perfectly grilled chicken, cheese, and tomatoes. Pretty much all the best things in life in one delicious sandwich. Ingredient Notes Sourdough bread: Slightly tangy sourdough is so good with this sandwich, but if you don’t have any, you can substitute any bread here....

Slow Cooker Beef Ribs

A couple of years ago, I posted these Oven-baked Beef Ribs. In that post, I call them my fast, “good enough” beef ribs, because while they absolutely hit all those BBQ beef rib sweet spots, they only cook for an hour, so they don’t get enough cooking time to become truly tender. Since that post went up, I’ve gotten a bunch of messages to the effect of, well, that’s great, but what if I actually want really tender ribs?...

Small Batch Chocolate Chip Muffins

I went a little muffin crazy this summer and have posted a bunch of small-batch muffin recipes over the last couple of months. There were Small-batch Chocolate Chocolate Chip Muffins, Small-batch Orange Muffins, and Small-batch Blueberry Muffins. And today, I have some Small-batch Chocolate Chip Muffins for you. This is the last muffin recipe I have on the calendar for now, but if there’s something you’d like to see, shoot me an email....

Small Macaroni Salad

I have a confession: You know what my favorite summer food is? It’s not ice cream. It’s not s’mores. It’s not even a perfectly cooked and marinated ribeye steak (though that’s a really close second). It’s spoonfuls of macaroni salad stolen from the fridge on a hot summer day. I don’t know what makes this taste so good. Maybe it’s the blast of cold air you get every time you open the fridge or the delicious feeling that you’re doing something vaguely naughty and getting away with it, but for whatever the reason, it’s the best, and I highly recommend it....

What To Do With Leftover Buttermilk

This is the first post in my new “Waste Not” series, a series where I highlight some of those ingredients that always seem to go to waste after their initial use. Waste is one of my biggest pet peeves in the kitchen, but something I am totally guilty of and struggle with. I’m hoping these posts will help me and others find creative ways throw away less, use up more....
